Pot Of Gold Cupcakes For St Patrick’s Day

St. Patrick’s Day is right around the corner…and what better way to celebrate than making these easy St Patrick’s Day cupcakes! These Rainbow Pot of Gold cupcakes were inspired from a post on No Time for Flashcards and another from Make and Takes. And, of course, these St Patrick’s Day cupcakes didn’t turn out exactly how I had planned…but oh well they still tasted delicious!
Rainbow Pot of Gold Cupcakes
Here’s what you’ll need:
- Gold cupcake liners
- gold sprinkles (I found both the cupcake liners and sprinkles at Michael’s, using a coupon of course)
- pipe-cleaners
- yellow cake mix
- eggs
- oil
- frosting
- toothpicks
1. Mix the cake mix according to the box directions. |
(Little Brother wanted to help…so he climbed up in the chair by himself!) |
(We added some gold sprinkles in the cake mix so that there would be gold speckles in the cupcakes when they were done. DON’T DO THIS!  Apparently, sprinkles dissolve in cake batter.) |
2. Fill the cupcake liners 2/3 full with the cake batter. Bake according to the directions and then let cool. |
3. Mix some vanilla frosting with yellow food coloring. |
4. Spread the frosting on the cooled cupcake and then sprinkle with gold sprinkles. |
5. Cut the pipe cleaners in half.
I tried twisting the ends and then putting them in the cupcake… …But they just sliced right through the sides of the cupcake! 6. Instead, I wrapped the ends of the pipe cleaners around the tops of two toothpicks and stuck the toothpicks in the cupcakes. |
